Brett and I have been on a mission to save a few dollars on the weekends by staying in and cooking our own grub. Going out for a $100 meal once every weekend can definitely add up you know? We might be giving up our bougy meals but we aren’t willing to give up our favorite craft cocktails. Leave it to my husband to find the best bourbon based drink using fresh ingredients. I truly believe that the trick to a good drink is using real fruits and herbs. The ingredients are simple and 100x more delicious that using juice out of a container.
This peach bourbon smash is the ideal refreshing drink to enjoy on a Friday or Saturday night. We made it last weekend and I knew I had to share with you all. It has just enough sweet peach and lemon flavor with a subtle touch of fresh mint – making it the ultimate refreshing drink. I can’t handle an old fashioned like my husband can so this is my ideal way to enjoy bourbon.
Here is what you need to make 2 servings:
- Preheat an outdoor grill for medium-high heat and lightly oil the grate. When the grill is hot, close lid and allow to heat, 5 minutes.
- Place peach halves and lemon, cut-side down, in sugar until coated. Place on the grill; cook until fruits are soft, about 5 minutes. Cool on a cutting board, about 1 minute. Cut peach into slices with a knife; reserve 2 for garnish.
- Place remaining peach, mint leaves, and simple syrup into a cocktail shaker; juice lemon into the shaker. Gently muddle with a cocktail muddler. Pour in bourbon and ice, cover, and shake until the outside of the shaker has frosted. Strain into a chilled glass and garnish with grilled peach slices and lemon.
