I DO love a good hearty salad that leaves me feeling full and satisfied. Most of these recipes are copycats from my favorite restaurants or fast food chains like Sweetgreen. Here are 8 favorite salads to make for the work week:
#1 Massaged Kale Salad with Chicken, Sweet Potatoes – This one of my current favorites (pictured above). Thanks to Liz Adams at Sequins and Stripes and Sweetgreen’s Harvest Salad for this recipe. I have been “massaging” my kale salads recently because I can’t stand the harsh texture of eating raw kale. All you have to do is drizzle some extra virgin olive oil and a little kosher salt over a bed of kale and literally massage the kale with your hands for about two minutes. As I “massage” I’ll remove the thick chunky stems as well. For toppings I love to add roasted sweet potatoes (chop up 2-3 at 425 degrees in the oven for about 30-40 mins.), baked chicken breasts, dried cranberries, goat cheese, sliced almonds, and chopped up baby cucumber. For the dressing I’ve been mixing white wine vinegar, extra virgin olive oil, and dijon mustard. YUM!
#2 Kale, Chicken, and Pickeled Beets Salad with Goat Cheese – this is copycat recipe from one of my favorite Spring salads from Sweetgreen. I’ve never been a big beets fan but roasting them with balsamic vinager and olive oil and red onions is a game changer.
#3 Roasted Cauliflower & Quinoa Salad – this is another great salad that is inspired from Sweetgreen’s Fall recipe. I play around with how I spice the cauliflower to make it less bland. The Sweetgreen version is spiced with curry. We’ve also roasted it with dijon mustard on other occasions. I swap the suggested greens with arugula. I’ll also add in nuts, dried cranberries, chicken, chickpeas, and various cheeses depending on how hungry I am.
#4 Apple Cranberry Walnut Salad – I love this for the Fall! I’ll add chicken and sometimes pomegranate seeds too! So refreshing and yummy!
#5 Steak Salad with Grilled Onions – This is an inspiration from the steak salad that I love so much at Clydes. If you love steak, you’ll get a lot of satisfaction from this recipe!
#6 Spinach and Smoked Salmon Salad – Salmon is probably the most eaten fish in our house. You can make this with really good quality raw smoked salmon or a cooked salmon filet.
#7 Grilled Ceasar Chicken Salad – Brett and I love the grilled ceaser salad so much at Rustico and I swear I’ll never go back to eating regular ceaser salad again. There is something about the smokey taste off the grill and the combination of the lemony ceaser dressing that makes this so darn good! This would be perfect to make on the grill once the weather starts warming up.
#8 Watermelon Feta Salad – My favorite salad for summer! I will just drizzle balsamic and extra virgin olive oil instead of the recipe’s dressing. Also, I love to add fresh tomatoes and pistachio nuts to mine!
