Hi friends! Happy Friday! I am currently am heading to Rhode Island today for my cousin’s wedding. It has been many years since I’ve been back so I am excited to explore for a bit and of course be with family.
This has been a pretty low key summer for me and Brett so we have enjoyed a few weekends at home which has been extremely nice. We have been visiting the farmer’s market every Saturday or Sunday to pick up some yummy local ingredients. It has started to become a nice little routine of ours. How nice it feels to see all the chipper people in their casual weekend wear bustling around with the families and little pups. I love just taking in the beautiful site and aromas of the colorful flowers, fruits, vegetables, and fresh cheeses.
I always seem to gravitate to avocados, corn, tomatoes, watermelon, and peaches (oh the peaches…). Of course there is so much more to pick from but these are always on the list and make it in our bags. Here are a few fun recipes I have been pinning and eyeing lately. Its fun to play around with your favorite ingredients isn’ it?
Avocado Toast Toast 12 Ways – Avocados are really a west coast thing but its definitely worth picking up at the stores as they are in season! I love avocado – especially on toast while loading a bunch of other yummy ingredients. They really make for easy lunch or dinner options during the work week.
Avocado Tuna Salad – Another great and EASY lunch or mid-week dinner option.
Corn on the Cob Grilled 5 Ways – simple corn on the cob is great but I love the idea of play with different toppings. I have never been someone who easily eats her veggies w/o something to add a little extra taste. A topping or two always helps encourage me to eat my greens.
Grilled Mexican Corn Salad – this recipe is pretty simple with only a few ingredients – ideal for a side dish for a summertime bbq.
Tomato Salad with Herbed Ricotta and Balsamic Vinaigrette – the only thing that makes tomato even more delicious by itself is adding some cheese, herbs, and an classic vinaigrette.
Spaghetti with Fresh Tomatoes and Basil – I make a pasta dish at least once a month and I typically like to keep my pastas simple and basic but with summer fresh and flavorful ingredients. I love how pasta makes the best leftovers during the workweek. Also nothing like a bowl of pasta and a glass of vino after a long workday – ammi right?!
Easy Summer Gazpacho Soup – this is something I know my husband would really enjoy. Its light, refreshing, and full of flavor.
Peach Bourbon Smash – you guys, I am so obsessed with this drink. I can’t recommend it enough – I love Bullet bourbon!
Peach Pie – my dad has been this a few times this summer. It is too good. You need to try this. Even if you aren’t into pies (which I’m not really) but this one I absolutely devour. Top with vanilla ice cream! OR if your too lazy to do all the work – this brown sugar cinnamon baked peach recipe is pretty mouth watering.
Peach & Berries – peaches are great eaten by them juicy selves 😉 but I love to toss in a few complimentary berries to make a nice lil snack out of it.
Watermelon Arugula Salad – my favorite summer salad that has the best and most yummiest ingredients. I add pistachio nuts too!
Watermelon Mojitos – I really need to try this – looks so refreshing for summer!
Strawberry Watermelon Popsicles – this is a recipe I really need to try before the summer is over. They look like the perfect treat after a long day in the sun.
