Scrambled Eggs with Smoked Salmon and Cream Cheese – This is not a new to me recipe but I wanted to share with you because its one of my favorite breakfasts to make when I want something filling but healthy. My friend Steph was the first person to introduce me to this recipe in college and I love coming back to this one. You will love it if you’re a fan of smoked salmon.
Old Charleston Style Shrimp and Grits (pictured above) – I made these last night and they were a hit! Good flavor with a little bit of a spicy kick. The cheesy grits were definitely a highlight. I can’t believe I’ve never made shrimp and grits before – its one of my favorite meals to choose at a restaurant.
Thai Chicken Coconut Curry – Nothing says comfort food more than a hot bowl of curry. I thought this recipe was “ok” – I wasn’t reaching for it for leftovers the next day. I love a good curry bowl though so I’ll report back on one I love.
