With the new year upon us I want to try some more lifestyle posts for the blog. Things in my day to day that are currently inspiring me and things that I hope will inspire you too! If you don’t already know – I love to cook. Brett and I are always experimenting on the weekends with different recipes. I love the whole process of making a meal from researching the recipes (there are so many good food bloggers out there), going to the grocery store, preparing the ingredients, and eating the meal. Please note that I don’t consider myself to be a cook that can create recipes on my own so I definitely rely on the recipes of others. But I thought it was be fun to try some new recipes together and have a little fun with what we think of the end results.
Since trying new recipes is something I do most weeks I thought I’d start a weekly series that list out all the recipes I’m trying for the week and you can join me! Think of it as sort of a book club but in the form of recipes. I’ll update the post at the end of the week and make comments on my Instagram stories highlighting what I thought of the recipe. Obviously some will be hits and some will me misses but that’s the fun in it all.
Since we are in the month of January I’m currently focusing on healthier meals that have a good mix of healthy protein, veggies, dairy, and yes carbs. I don’t restrict myself of carbs when I’m aiming to be healthy but I try to get a good balance and not over do it. I am however trying to eliminate overly processed foods like chips, cookies, etc. In any event here are the recipes I’m trying this week (clearly How Sweet Eats was a big hit!):
Thoughts: I made this the past 2 days and I really like it! I feel good and not overstuffed after eating it. It only has a little bit of brown sugar in it so I don’t feel so guilty. All about balance right? You can obviously tweak the amount of honey, banana, cinnamon, and sugar to your liking. I certainly added a little more cinnamon than the recipe called for. This makes for a healthy breakfast in the morning this winter.
Thoughts: This one was very similar to the recipe above but obviously just had a peanut buttery flavor and I actually mashed the banana in the oatmeal this time around. I might add a little bit of sugar for next time but all in all a nice satisfying meal to have in the morning.
Avocado and Tomato Sandwiches (I’m swapping the bagel with whole wheat toast and also bought turkey which I might add in here too. Also instead of veggie cream cheese I’m going to add onion and chives on top of regular cream cheese) This would also make a great breakfast with an over easy egg on top.
Thoughts: This one was obviously a no brainer if you love avocado and tomato toast. It is pretty similar except you add cream cheese and chives. For lunch I toasted some multi-grain bread then spread regular cream cheese, a few pieces of chives, mashed avocado, sliced tomato, a slice of oven roasted turkey, and a little salt & pepper. It is such a good lunch for the work week!
Thoughts: I made this over the weekend and I’m obsessed with it. I’m not one to like leftovers but I was looking forward to eating this the next day! The pesto sauce/topping and the parmesan rind makes this recipe so yummy and different than your standard minestrone.
Thoughts: I was so sad not to like this one because it sounded SO good. I think I’ll have to try a different version of at a later date. I just didn’t love the marinade for the chicken. Admittedly I didn’t have dijon mustard and used regular mustard SO my opinion could be somewhat skewed. Also next time I wouldn’t use the paprika – it was just too overwhelming of a taste for the chicken.
Strawberry Peach Green Smoothie – I plan to make some version of this since I don’t have all the ingredients but I like this as an option to cure your sweet tooth for an afternoon snack or an after dinner treat.
